What is the origin or Pizza?

Pizza from Italy is, without doubt one of the most popular dishes in the world. You meet it almost everywhere, available in many variations, adapted to local tastes and customs. Italian pizza is a dish that continues to evolve and has little to do with the original version.

The first pizzas

This Italian dish dates back to late Antiquity. The word “pizza” appeared in 997. Its origin is controversial: for some, the term comes from the German  bizoo which means “piece of bread”, and for others, from the Greek  pitta which means “fouace, galette “

This flat dough indeed resembles many breads that is still available today across the different countries of the Mediterranean basin . Over time and depending on the region, this “bread” has been accompanied by ingredients. So there is no real city of its origin, but it was in Italy.

Where did today’s Italian pizza come from?

With the first trading posts and exchanges between countries, the tomato and the buffalo arrive in Italy, more precisely in Naples. The Neapolitans are the first to cover their bread with tomatoes. At the start, this simple dish to sell in the streets of Naples and in pizzerias where this bread, to bake in a wood- fired oven, like butter ham in a bakery.

It was in 1780 that the first pizza in modern Italy, the Margherita pizza (bread, tomatoes, cheese), made by Raffaele Esposito in honor of Queen Margherite who greatly appreciated her pizzas. This dish previously eaten in the street then acquires its letters of nobility, and has not stopped since diversifying.
